They build themselves a mental set of parameters to operate in and setup mental blocks for bad stuff and highlight good stuff and hold it to great importance. A good example would be a morning cup of coffee. When I had stressful periods of work I'd form a morning habit of something positive to start my day a bit happy: the morning coffee and bagel or some pastry. Now if for some reason I couldn't get that I'd could really ruin my day. When things weren't as stressful I could honestly care less if something interrupted my routine.

I'm not sure if it is the same for everyone but I can feel what Pyro is saying. You can work up a very precise manner of dealing with stress that works very well, but if something unexpected throws it off it could make everything else crash down on you at once.
