god catan is an amazing game. do they allow ridiculously convoluted trades on 360, or is it relegated to plain-jane wood-for-sheep trading?

Unfortunately no
While a lot of fun, things like Catan, Monopoly, Risk, etc. you almost can't translate to an online game as everyone has slightly different rules and its those in person "house rules" IMO that really make the games that much better
