I'm not sure how far you guys want to take it, but a scrim team is a group that plays against other teams; they can be competitive or not. Most TF2 teams use gamesurge IRC to set up matches when they want to throw down.
As far as vent goes, I'm assuming you guys could just comandeer a room on the Destructoid server.

Id rather stick my dick in a toaster oven than ever spend more than a few minutes on there. In game voice works lovely, or a have a few other clan friends that have vent/TS servers that I could borrow.
