Depends on your play style, each class has two focuses with different levels of fun. Here is my take on it
Recon - funnest as a bomber, run around cloaked dropping bombs on people
Medic - funnest is poison, basically you just poison people a lot
Assault - haven't played but there is a lot of room for being a beast in this class
Robotics - funnest is droids, you turn into a weaker assault class with pets. Having buildings is super useful but with the amount of recons playing you are pretty much forced to use a slot for sensor.
Also take note, most classes do not reach their maximum fun until level 30.

The demo is the whole game, the only restriction is that you're level capped at 15, so you can't earn XP or unlock items beyond that nor can you participate in things that require a higher level (harder difficulty PvE, Raids, and AvA), but you're free to do whatever the hell else you want. I leveled four characters to 15 before I bought the game, to figure out which ones I wanted to play the most.

This is why I generally don't like games that are instance fighting or PvE, I guess this is sort of both right? If we can spend all our time mucking up other people's fights it would be more worth it

I'm sure you can come up with something. They eliminated the largest thing that were causing complaint - there was an exploit that let a team led by an upper-level player get into Raids with lower-level players, which makes everyone rage pretty hard because they're empty suits. Now every member of the team has to be 30+, but even there there's room for trolling by using shitty gear. All-drobo + Force Target would be pretty funny, since you can't repair the objective you're supposed to be defending ;x

Well it feels like the game has potential, only the game is unbearably laggy with my shitty dorm connection. For some reason I get great download speeds(like 2 MB/s) but any online game other than Starcraft 2 has massive lag.

I have a medic and robo in the low 20s. Working on medic now since I find it more fun and there is a distinct lack of them in game.

Also apparently poison medic is useless PvE but healing medic makes a huge difference.
