I have no idea how, but that thing has a better nonstick coating than the Calphalon pan. Copper is such a useful metal. [/quote] Can't argue much there, but copper still isn't as strong and can corrode faster, and aluminum is still pretty good at conducting heat. And thermal expansion won't mess the layered metal. And the best pots are probably the sort with two layers of stainless steel surrounding copper. Durability and easy maintenance of steel, conductivity of copper.
