Young Guns 1 & 2 no question.  I heard that the indian guy that got a knife through his arm actually happened on accident when they were filming.  He just ran with it because he is a badass.  Don't know if this is urban legend or not.

Butch Cassidy is great, there is also a really great comedy based on it called the cisco kid or something with cheech.

Also the Magnificent Seven is a western remake of the seven samurai.
