Pretty much echoing what caff and tragic said, I know the same was true for India (not sure about now, the country has been changing socially and economically pretty rapidly).
Cooking is more about bacteria. Most of these questions would better be answered by someone like an anthropologist (yes, like Indiana Jones, but real life anthropology is not nearly as exciting).
