It's a very light soup compared to other Asian noodle soups.

However, good pho shouldn't taste bland. The stock is made from beef bones, so good pho has a pretty beefy flavor. It should never be very oily though.

Adding the different shrubberies provided on the side and some hot sauce and sweet sauce adds more flavor as well, depending on your personal preferences.

You know I never realized this, cause one Stir Fry place I used to go to Cilantro was put into everything, and towards the end of the dish, it always tasted like soap and I hated going there....now I know why...

I would have to try it again to see if it's a soapy taste... probably. I hate coriander too.

I was working at the greenhouse and we were selling this. My co workers were showing me all the stuff that was edible and having me try it out so I could tell customers about it, and when we got to the cilantro it was BAD. A horrible taste in my mouth. Seems I've forgotten it though.

I thought they were tricking me at first actually. My one particular co worker had a habit of pulling some strange looking plant material from his pocket and saying "hey, try this". This included some strange and rare root that helps with colds (I was sick but again, the taste was terrible) and a plant that makes your whole mouth go numb (I did that one a few times because it was funny). He had me try wormwood the other day (which I now grow) and it tasted horrible (it's in absinthe, helps make that special taste and coincidentally kills worms if you happen to be infested) so I thought it was just another trick.

I had no idea people ate that on purpose.
