My wife and I have the attitude that while were not necessarily trying to have kids, if it happens its no big deal. so i pull out but if its right after her period then i'll let it fly since the chances of her getting pregnant is pretty low.

The gynocologist is hedging her bets.  She doesn't know you or your fiancee very well (she obviously know SOME parts very well, but I digress).  She can't say for certain that finacee will take it everyday.  You, obviously, know better.  You're intelligent people and, in that case, it'll work much more than 80% of the time.  That 20-25% is for people who aren't as...diligent? Responsible?  It's a fudge factor for when human error overcomes science.

Exactly.

The biggest problem with the pill is not taking it correctly, followed by not knowing what can reduce the effectiveness of it.

Antibiotics, diarrhoea, vomiting (especially close to the time the pill was taken), weight fluctuations, etc.
